Chef Michael Guy is experimenting with a new tag for the gluten-free, made-from-scratch food on offer at the Nita Lake Lodge’s three restaurants: “mountain healthy.”
The Cure Lounge and Patio kitchen, shared by The Fix Café and Deli and Aura Restaurant, is fast becoming a culinary ground zero, with vegetables from Pemberton’s Rootdown Organics, hormone-free meat from Two Rivers Meats and regionally sourced Ocean Wise seafood, all spun into clean mountain fare.
“Pretty much everything we do is hand-made,” says Guy. “We make the burger buns. We make our own fries. We don’t use a lot of fats even in the winter. It’s just super-clean food.”
Pastry chef Megan Stringfellow bakes everything in-house, from buns to brownies to the ice-cream bar’s waffle biscuit.
With its tucked-away lakeside location just a boot-scoot from Creekside’s ski-out, Cure Lounge now stands as a welcome panacea to an overly busy resort. And not just for those with food sensitivities (nitalakelodge.com).
