Vancouver’s award-winning Anh and Chi has been the city’s go-to Vietnamese restaurant for decades. Co-founder and creative director Amelie Nguyen shows us how to make a simple and satisfying meal for busy office days.
Serves: 1 to 2 people
Prep time: 12 to 15 minutes
In a small pot, bring water to a boil. Wash and trim the ends of the green beans. Blanch green beans in boiling water for 1 to 2 minutes, then drain and set aside. Cut tofu into 1-by-1-inch pieces, then set aside.
In a wok or pan, bring avocado oil to medium-high heat. Add garlic and stir until just slightly golden.
Add green beans, tofu and soy to the same pan. Stir-fry for 2 to 3 minutes. Add salt and pepper to taste. Enjoy with jasmine rice.
